Chicken Schnitzel Sandwich

Crispy chicken schnitzel stacked with crunchy slaw, peppery rocket, and creamy mayo on soft white bread — a pub classic you can make at home in minutes.
Ingredients
- 2 slices JUST White Bread
- ½ cup plain flour
- Flaky sea salt and freshly cracked black pepper
- 4 chicken breast fillets, butterflied and lightly pounded to 1 cm
- 2 eggs, lightly beaten
- 1 cup panko breadcrumbs
- Neutral oil, for shallow-frying
- 2 tbsp mayonnaise
- 8 slices white sandwich bread
- 1 cup wild rocket
- 1 large carrot, julienned
- 1 cup red cabbage, finely shredded
Method
1. Season the flour with salt and pepper. Dredge each chicken fillet in flour, shake off excess, pass through beaten egg, then coat thoroughly in panko. Press the crumb firmly to adhere.
2. Heat 1 cm of oil in a wide heavy-based pan over medium-high heat. Fry the schnitzels 3–4 minutes per side until golden and cooked through. Drain on a rack; season immediately.
3. Spread mayonnaise across four bread slices. Layer rocket, julienned carrot and shredded cabbage. Place the schnitzel on top, season, and close with the remaining bread.
4. Slice in half and serve immediately.
